This session lead by Alyssa Walters, Research Chef, Matt Goldstein, Product Marketing Manager, and Matt Schueller Director of Marketing Insights, Ardent Mills, will cover how North American millets are underutilized and fit nicely in today’s marketplace – from market trends and insights, to product application, consumer demand, and sustainable agriculture practices.

About the Speakers.

Alyssa Walters | Ardent Mills

Alyssa Walters is the R&D Research Chef at the premier flour-milling and ingredient company Ardent Mills. In this role, Alyssa creates innovative prototypes and recipes, develops customer solutions with both Traditional Flour and Emerging Nutrition portfolio ingredients, and manages trade show R&D support. As the R&D lead for Millet innovation at Ardent Mills, she has been developing ways to utilize Millet and Millet flour in unique and modern ways. ​

Prior to joining Ardent Mills, Alyssa worked in event food service at Empower Field at Mile High and the Denver Convention Center, creating inventive desserts and culinary small bites.​

She holds a bachelor’s degree in Culinary Nutrition and an additional associate’s degree in Baking and Pastry Arts from Johnson & Wales University. When not in the kitchen, she’s busy spending time outdoors or working in the garden. 

Matt Goldstein | Ardent Mills

Matt Goldstein is a Product Marketing Manager for Ancient Grains and other Gluten Free Flours with Ardent Mills and is based out of California. Before entering product marketing, he studied Food Science at Cal Poly San Luis Obispo and has spent most of his career as a CPG Product Developer. Matt fell in love with grains and baking at a young age by growing up around his family’s small bakery. He has since become a serious home baker, devoted to exploring the unique value of ancient, heritage, and regional grain varieties. Matt, supported by a deep bench at Ardent, leverages his passion for grains and his food industry experience to expand the market for alternative grains.

Matt Schueller | Ardent Mills

Matt Schueller joined Ardent Mills in 2020 as Director of Insights and Analytics.   In his role, Matt focuses on tracking, measuring and identifying the stated and unstated factors that influence consumer behaviors within food, and uncovers the resulting opportunities in the marketplace. Matt has more than two decades of experience in the food and beverage industry. Prior to joining Ardent Mills, he had multiple insight and analytics roles in the Foodservice and CPG spaces.
