Responsibilities:
As Food Scientist, Carlson’s responsibilities include:

  • Special focus on baking with wheat and soy

  • Conduct laboratory analyses on northern grown crops

  • Assist with pilot-scale processing

  • Participate in demonstrations and training for domestic and international trade team and short course participants. 


Education:

Bachelor of Science in food science, North Dakota State University, Fargo, N.D.


Experience:

Research Specialist for the Agricultural and Biosystems Engineering department at NDSU from 2008-2010, working with canola and canola biodiesel. Student Lab Assistant for the Cereal and Food Science department at NDSU from 2005-2008.
