Course Overview:
This in-person Stone Milling Course provides comprehensive training for participants to gain practical experience operating a stone mill. Held at the Northern Crops Institute (NCI), the course includes hands-on sessions using NCI’s stone mill and opportunities to test the resulting flours in the bake labs. By the end of the program, participants will have the skills needed to operate and optimize a stone mill, producing high-quality flours that add value to their products.
Throughout the course, participants will learn about mill components, operation, and capacity; producing desired flour types; and conducting physical and chemical characterization, including particle size, color, gluten, and starch quality. Key topics include stone mill design, operation, and maintenance; grain cleaning and preparation; conditioning methods; flour quality evaluation and regulatory considerations; and the application of stone-milled flour in bakery product development.
