Course Overview:

This in-person course at the Northern Crops Institute explores pasta production using various U.S. wheat classes—including Hard Red Spring, Hard Red Winter, Soft Red Winter, and Durum—to demonstrate how different wheats affect processing and final product quality. Through lectures and lab demonstrations, participants will learn from industry experts about pasta production fundamentals, quality assurance, die manufacturing and maintenance, and the role of ingredient quality in achieving high-quality pasta products.

Managers, supervisors, technicians, and others responsible for plant production, maintenance, production development, quality assurance, and sales of high-quality pasta products.
