Asian Noodle Technology and Ingredient Application Short Course

Natsuki Fugiwara, NCI Food Technologist, attended the Asian Noodle Technology and Ingredient Application Short Course at the Wheat Marketing Center, Portland, Ore., March 11-14, 2014. Participants in the course learned about Asian noodle classification, formulation, and processing procedures for Udon noodles, parboiled wet noodles, Yakisoba noodles, instant ramen noodles, Wonton wraps and egg noodles. Natsuki hopes to use her new knowledge to enhance NCI courses.
