Stone Milling: A Hands-On Experience (In-Person)

Course Overview:

This course will provide training to enable participants to entirely run a stone mill. Participants will receive hands-on training with the NCI stone mill, and be able to experiment with the flours they create in the bake labs.

Participants who take this course will become proficient with stone milling, add value to products, and enjoy a Fargo adventure in February. 

Objectives:

  • Know the mill (components, how to utilize, capacity)

  • How to produce the flour desired

  • Physical characterization (particle size, color, etc.)

  • Chemical characterization (nutritional characteristics, i.e. ash)

  • Conditioning requirements and methods

  • Flour utilization

Major Topics:

  1. Grain production, nutrition, and quality parameters

  2. Stone mill design, machine, and maintenance

  3. Grain cleaning and preparation for milling (tempering)

  4. Stone milling operation, adjustment, safety, and application

  5. Flour quality evaluation and characterization

  6. Application of stone-milled flour

  7. Development of bakery products using stone-milled flour

This course is designed for custom millers, producers thinking about adding value to what they grow, artisan bakers and staff, recent buyers of stone mills and more!

Included in the registration fee are course materials, lunches and refreshments during the course, and one evening dinner banquet.

Airfare, hotel rooms and other meals are not included.

Hotel Information:

NCI will reserve hotel rooms for all participants at the various locations during the course.  After registering, an email will be sent to you with more information. Hotel rooms costs are not included in the course registration fee.

Transportation:

Transportation between the airports and hotels will be arranged by NCI, with more information provided prior to the start of the course.

NCI will provide daily transportation during the course.

Cancellation Policies:

Requests to cancel a registration must be received on or before January 15, 2024 to receive a full refund. Requests to cancel a registration after that date will receive credit for a future NCI course that is good for 1 year.  If NCI is forced to cancel this course, all registered participants will be immediately contacted, and each will receive a full refund within 10 business days.
