Extrusion and drying of Italian-style pasta involves principles of engineering, physics and chemistry. Understanding these principles and their applications during processing are critical for the production of high quality pasta products.

This course provides participants with technical information and “hands-on” experience in extrusion and drying of pasta products. Speakers will present raw material quality criteria, specifications, and processing variables and their impact on final pasta product in detail. Participants will process pilot-scale pasta, followed by a cooking exercise evaluating the final product. The course concludes with a tour of a commercial pasta manufacturing facility. As a result of attending the course, participants will be more aware of the processing and non-processing variables that can and will affect pasta quality.

TO REGISTER

Registration Fee: $1,100.  Payment in full is due one week before the start of the course. Registration deadline is June 28, 2010. Course fee includes written materials associated with lectures and laboratory demonstrations and scheduled breaks. Hotel rooms and other meals are not included in tuition.  Cancellations received after June 28, 2010 will be assessed a 10% service fee.

Course Schedule:  On the first day of class, course participants should be in the hotel lobby by 8:30 a.m. for transportation to the campus. Class will begin at 9:00 a.m. on Monday, July 12 and adjourn around 3:00 p.m. on Friday, July 16.
